College application help?

I'm a junior in high school and I look at school exactly like you do and am constantly thinking about college. I think the best thing for you to do is try taking some online courses. My school uses IDLA (Idaho Digital Learning Academy) which offers countless courses and many of them are AP. I took two online this summer and if you're self-motivated like me, I really enjoyed it and it was simple. You should look into whether your school or state offers this program. Credits I earned from IDLA were put right onto my high school transcript, so you should talk to your counselor about that :) I don't think colleges will look at the courses you take as 'supplement courses' because a work ethic is a work ethic regardless of when you had it. The volunteer hours and student leadership are going to be huge pluses, too. Good luck!
